Makes about 4 dozen 1-inch hearts
- Canola oil for the pan and cutters
- 1 1/4 cups milk
- 3 1/2 cups sugar
- 8 tablespoons (1 stick) unsalted butter, cut in small pieces
- Pink gel food coloring, (optional)
- Lightly oil a 9-inch-square pan. (A smaller pan will make the fudge thicker and more difficult to cut.) Place milk in a heavy 12-quart saucepan. Stir in sugar; add butter. Over medium heat, stir constantly, until sugar dissolves and butter melts. Increase heat to medium high, bring to a boil, and cover with lid. Let boil for 2 minutes, and uncover. Do not stir; clip a candy thermometer on side of pan, and let mixture boil, over medium-low heat, until it reaches 240 degrees (the soft-ball stage), 15 to 25 minutes. Meanwhile, prepare an ice water bath.
- Immediately remove pan from heat, and dip the base of the pan in the ice water for 5 seconds. Let the fudge sit at room temperature without stirring, with the thermometer attached, until the thermometer reads 122 degrees and mixture is lukewarm, about 40 minutes. If using food coloring, add 1 drop. Stir the fudge with a wooden spoon until it changes from glossy to opaque and is thick and creamy, 2 to 5 minutes. Quickly pour into prepared pan. Use piece of plastic wrap to smooth fudge into the pan, creating an even surface. Let cool completely, 2 to 3 hours, and cut with 1/2- to 1 1/2-inch heart cookie cutters. (Oil the cutters with the canola oil inside and out before using.) Fudge will keep, well wrapped in plastic or in an airtight container, up to 1 week.

Posted this afternoon First class along with her christmas box that was returned to me yesterday! Such a palava. Anyroad.. I got round to photographing the box as a wee teaser as she did the same for me! The box shes sending me looks amazing. See it here
This is some crazy self adhesive paper i got from Paperchase in the sale - i think its designed for backing kids school books. I am never buying anything like that again. Stuck to everything but the bloody shoe box! There are remnants of it stuck alll over my house.I rearranged the box and crammed as much as I could inside, so much so that the lid wont close lol. BUT there are a couple wee extras parcelled with it. I just hope nothing gets ruined on its way over!

This is the amazing wee leather art book my bf got me for christmas from the continental market when it was in Belfast in december. I love it loads :) The only problem with it is that its handmade paper and really thin so i can use ink on it or it bleeds like crazy through the next pages.
I decided that this year was going to be all about the number 10; 10 resolutions, 10 quotes, 10 doodles....etc. So to begin with i decided to write out 10 Resolutions - ive got all the resolutions figured out I just havent got round to all of my illustrating yet. I do have post its of wee reminders of what i want to do throughout the book. My first resolution was to stay happy... cuz i am incredibly happy despite being sick..i have my moments but i want to stay positive that il get better and im lucky im no worse than i am.. and lucky i have amazing friends, family and bf. My second resolution is to sort out my money and savings! Its depressing thinking about lack of moneys.
Third resolution is to buy more fresh flowers.. I have 2 flower shops beside me and i saw earlier that they do mixed bunches of flowers for a pound.. i just think it would bring a lovely freshness to the house but i want to get the living room decorated first! (Another resolution!)
I need to shoot more and use more of my film cameras! Especially my wee fuji that I love so much. My dad was amazing and bought me a pack of 5 double packs of Fuji mini films for christmas so im well set up!

DIY | Tutorial | Shortbread Buttons
I came across this wonderful recipe tutorial from Forty-Sixth at Grace and I HAD to reblog! In the recipe she fails to add "food colouring" in the ingredients section! Remember this is important unless you want plain shortbready coloured shortbread. My Favourite shortbread recipe can be seen below :)




I love these!! I cant wait to have a girly tea party to get baking these wonderful shapes! I know that its possible to get candy moulds from BakeItPretty but this tutorial is great for making cookies! You can DOWNLOAD the recipe HERE
My Favourite Shortbread Recipe:

| 1. | Preheat the oven to 160°C/gas mark 3. |
| 2. | Put the icing sugar, plain flour and cornflour into the bowl of a food processor fitted with the double-bladed knife and give them a quick blitz (just to save you sieving, which is my most-hated job in the kitchen) before adding the butter along with the vanilla seeds you’ve scraped out of a pod. (I find the easiest way to do this is by cutting the pod in half across, and then splitting each short half lengthwise and prising out the seeds with the point and edge of a sharp knife. Don’t even think of throwing the deseeded bits of pod away: stash them in a jar of caster to use next time a recipe requires vanilla sugar.) |
| 3. | Process again until the soft mixture coheres and begins to form a ball, loosely clumping around the blade. Turn this out on to a Swiss roll tin and press to form an even (or as even as you can make it) layer, using fingers or the back of a spoon, or both. Be patient: I promise you it will fit smoothly. |
| 4. | Using the tip of a sharp knife cut the pressed-out shortbread into fingers. I make two incisions lengthways – ie to form three layers – and then make ten cuts down – so that you end up with eleven fingers per layer. Obviously, the aim should be to cut at regular intervals but don’t start getting your ruler out. Just go by eye: uniformity is the province of the conveyer belt not of home cooking. Use the tines of a fork to make little holes in each marked-out biscuit: I press down about three times, diagonally, on each finger. |
| 5. | Now that you’ve pressed, incised, and punctured, slide the Swiss roll tin into the oven and bake for about 20–25 minutes, by which time the shortbread will be pale still, but not doughy. Expect a little goldenness around the edges, but shortbread should be not crisp but melting. Remove the tin from the oven and let cool for 10 minutes or so, before removing, with a palette knife and your fingers, to a wire rack. Sprinkle with sugar and leave them to cool completely before storing in a tin. |

Love Food | Carrott & Orange Cupcakes
Carrot & Orange Cupcake Recipe
I baked these for my bf's birthday yesterday along with some amazing chocolate moustaches! I got the moustache lolly pop mould off of ebay in the states and they delivered in pretty quickly so woop!
Ingredients
2 large eggs
175g golden caster sugar
150ml sunflower oil
200g self-raising flour, sifted
3 tsp mixed spice
2 medium carrots, coarsely grated
1 tsp vanilla extract
Finely grated zest of 2 oranges
1½ x 200g tubs Waitrose Light Soft Cheese
50g golden icing sugar, sifted
Method
- Preheat the oven to 180°C, gas mark 4. Place 12 paper muffin cases in a deep bun or muffin tin.
- Put the eggs, sugar and oil in a large bowl and beat with an electric whisk for 2-3 minutes until light and fluffy.
- Using a metal spoon, gently fold in the flour, spice, grated carrot, vanilla extract and half the orange zest, until thoroughly combined.
- Divide the mixture between the muffin cases then place in the oven for 20-25 minutes until well risen and golden brown. Remove from the oven and place on a cooling rack.
- For the frosting, beat together the soft cheese and icing sugar until smooth. Chill until ready to use. Spread liberally over the cooled cakes and top with the remaining zest, or, as shown, make long strips of zest using a zester.
Cook's tips
You can make 18-20 smaller cakes in fairy cake cases, if you prefer. Cook for 18-20 minutes. For added texture and flavour, try adding chopped nuts or pecans to the mixture. Once the cakes are frosted they should be eaten within a couple of hours or stored in the fridge.
